It's almost Christmas (well, kind of) and I ordered a shoulder of pork to roast. I was given a price for the deboned shoulder which was obviously more that with the bone in. I went to collect it and very tentatively asked if I could take the bone to make stock. Werner, the butcher, hesitated and asked him to leave it, realising it was a tad cheeky. To my surprise, he weighed and priced the deboned cut and then put the bones into a separate bag for me to take home. Thank you very much, Werner. Will I make a return visit? Oh yes :)
